Do: Chicken & Pasta Dinner Party

Another successful dinner party completed! This was the "meet the long distance boyfriend" event, and I am happy to say all went well. Everyone liked my love (of course), and at least we got drunk. I put the menu together myself and was pretty proud of the results, so I wanted to share in case you have a dinner party or want something to bring to a party in the future. As a bonus, everyone loved it and it was dairy free for me, vegetarian, can be made gluten free for others (which I happened to do for a friend with allergies), and even your Paleo friends will be satisfied.

The Appetizers
I wasn't particularly creative here, just did a sausage and brie plate with a baguette. Plus some pita crackers with hummus and two Trader Joe's warm appetizer bites. I kept this part simple so I could focus on getting everything else out and ready on time for the party.

The Entrees

Asparagus, Goat Cheese, and Lemon Pasta
This is originally from Bon Appetit, which means FANCY, but I got it from the Smitten Kitchen blog here. A super easy and fresh tasting side dish or main entree for your vegetarian friends. A huge hit!

Roast Chicken
So I just went for it here, it was a last minute addition when my brother told me he had gone Paleo and I realized...pasta wasn't really enough for everyone anyway. Good thing is, roasting a chicken is SO SO easy and kind of fool proof. Plus everyone is impressed. I followed my memory mixed with the Barefoot Contessas recipe here. However, I don't coat my bird with butter like she does, I use olive oil instead.

There was also a fresh salad I topped with avocado for everyone as well.

The Dessert
Apple pie and berry pie. NO I did not make them myself, keeping with my "keep it simple" theme, my focus was on the main entrees so I cut corners in the appetizer and dessert area. However, I did get yummy more expensive pies from Trader Joe's, instead of just any ol brand from the grocery store. Verdict? Delicious.

Order of Operations
2 hours before party: put together and chicken and begin cooking
1 hour before party: cook pasta, will be done before party time so you can just cover with foil.
.5 hour before party: remove chicken and cover to keep warm. Turn the oven to your warm appetizer temperature needs and put in. Put together and out the cheese plate, hummus dips, plates and utensils, bottle opener, etc.
Guests Arrive: let everyone arrive then unwrap and leave out the delicious food! Cut up avocado for the salad at this time. After dinner, turn the oven on to 200 and put the pies in to warm for 10 minutes.
Perfect order. Perfect party.

After hosting so many of these things major themes are coming out.
1. Keep it Simple.
Choose what to spend time, money, and extra effort on. In the other areas just get pre-put together items.

2. Paper is your friend.
SO GLAD we did paper and plastic this time! If it was a formal sit down dinner, of course I wouldn't. But in this instance our clean up today is going to be a breeze, which is perfect because I am exhausted.

3. Timing is everything.
As you saw, I timed everything out beforehand so I knew when I needed to wake up that day, how much time I had to clean, go to the store, and what time I HAD to start cooking so boyfriend had to finish up the cleaning. Planning and timing are important for meals with multiple moving parts.

Hope this helps with your dinner party adventures too!

xoxo

Make: Quick, Healthy, Cheap Meals. (you're welcome)

I suppose I've been consolidating these sources for awhile and haven't been sharing (how rude of me). But I have gathered quite the collection of quick, healthy, and cheap meals via our BFF- The Internet. So without further adieu...

A Year of Slow Cooking

  • Whats that you say? You don't have a crock pot? GO TO TARGET NOW. NOW. NOW. Or craigslist. Whatever you do, get one asap because the >$20 investment will save you tons of moola in the end.
  • Por Ejemplo: place frozen chicken breasts in crock pot. Cover with 3/4 cup teriyaki sauce. Cook on low for 6 or high for 4. EAT. This is what Im saying. Sundays have become my slow cooker day and give me at least 4 servings which I can eat for dinner or lunch the next few days or freeze for much later (like soups. Try taco soup. You will die. And its literally opening cans and pouring them in)
  • If you are really smart you can turn it on before bed and wake up with lunch for the next day! Or do it in the morning and come home to the house smelling of garlic chicken and all you have to do is EAT.
  • All fresh, tons of healthy recipes, if you add a whole grain and steam some veggies you even get a double dose of healthy.

  • Now I haven't tried this yet, besides making a big crock of vegan soup every once in awhile and freezing for nights when I don't have dinner (plus its cheaper and healthier then those low cal canned soups and $3/can), BUT I hear from valuable sources its time consuming for one weekend and then you're set for potentially even longer then a month depending on how much you eat. Wow right?
  • they have meal plans for all kinds of diets that come out every season and have dishes according to whats in season, do all the grocery lists for you auto adjustable by #of people, give you a schedule for your day of cooking to really utilize your time, and it covers almost 100% of meals (not just dinners). PLUS the meal planning everything is FREE, and the ingredients aren't expensive or difficult.
  • they even have weight watchers plans, vegetarian, 10 day vegan, whole foods, and baby food.
  • I know. Lets do it NOW.

  • I found out about these from Hungry Girl which is an all around amazing site, but these suckers you literally just put the ingredients into some tin foil, wrap them up, and cook. Out comes a complete, delicious, healthy meal in usually less then 30min!
  • Once again, if you want to add grains those are really quick and healthy to make even if you don't have a rice cooker
  • There are lots on her website, just search "foil pack". One could even make 4 at a time and have meals for a few days...just saying.

  • This is highly recommended by Dave Ramsey, friends of mine, and even my family! We've been doing it for a few weeks now and love it.
  • Pay $5/month for a month of weekly meal plans customizable by diet choice (includes low fat, vegetarian, no processed foods, low carb, etc.) for a week of dinners for 2-3 people at $50/week
  • Every month also connects to whats in season, gives you a grocery list, and connects the meals so what you buy you use throughout the week on more then one meal. Meals take less then 30min to make and we've found to be really creative.
  • So lets see, if you're single and save the other half of the dinners for lunch, you do this and buy your snacks/breakfasts for under $20. Thats $70 or less per week on healthy groceries and meals!
Protein Shakes, tubs of plain yogurt, frozen fruit, almond milk...
I can't tout these breakfast life savers enough. Every morning I quickly blend my hemp protein with some unsweetened almond milk and half a banana or frozen fruit. Tubs of plain yogurt (soy in my case), the other half of the banana cut up in it, and a titch of agave I have around 10a. High protein and little to no carbs until dinner has greatly increased my energy at work too. Plus the hemp protein I use is $20/month...almond milk a few bucks...bananas $1/pound...and buying the tubs of yogurt instead of individual cups saves money too. I get away with about $1.50-$2.00 on my breakfasts/morning snacks this way!

Frozen Chicken breasts, frozen organic veggies...
Whenever chickens on sale I buy a bit extra and just freeze it to use for another time. You can get a few meals worth of chicken for a couple of bucks. I try and keep some always on hand so a healthy meal is always an option instead of take out or easy but heavy spaghetti. Did you know frozen vegetables are often considered healthier then even buying local produce? Why? Because they are flash frozen right after being picked and retain more of their nutrients this way while the local produce had to be shipped and sit in the store. Whenever frozen organic vegetables are on sale I buy a few and when cooking grains in my cooker, just stick em right into the steamer on top. BOOM- DINNER.

Love for the BULK SECTION...
Find a local Sprouts/Henrys, co-op, or wherever in your area sells things in bulk because OH MAN does it shave off a lot of cost. Lets see, $3 for a tiny box of cous cous...or $3 for a HUGE bag of cous cous...lets do the math on that one. Also great for when you're baking and only need a little bit of something. I like to keep a big bag of brown rice and a cans of beans in my cupboards at all times just in case its toward the end of the pay period and I've somehow run out of food.

I am sure after boyfriend and baby cake come I'll have even more perspective since my time will be somehow even more limited. But for now these are all serving me rather well. Also keep an eye out for special "Ad" days, coupons, promotions, etc. Every little bit counts.  You're welcome.

Make: Beverages

After gaining 10lbs over the last year or so and being in the process of getting back on track, I am continuing to really try and pump the water everyday to flush out toxins, keep me hydrated, healthy, etc. I will say that when I initially cut out diet coke, coffee, and pretty much anything else besides water and green tea I did lose a little extra water weight and had more energy! Now I think its been a few years and I've evened out, but other then a random diet coke now and then I've been on this water and green tea kick for quite awhile. But lets face it, water gets SO boring and I start to lose it by 3pm everyday at the office nowadays. I was literally falling asleep at my desk today. SO Heres some of my current favorite summer water fresheners! Enjoy.

Hope your summers been as sweet as mine.

Make: Summer Salad

Let me begin with a YOU'RE WELCOME for the following aHmazing recipe for your summer repertoire. Its freakishly healthy, fresh, filling, easy, and cheap. So much so- I'll admit I was a little shocked at how tasty it is too!

Without further adieu:

Mango Quinoa Salad

Ingredients

  • 1 cup cooked quinoa
  • 1 mango
  • 1 tomato
  • 2 ears of corn
  • 1 cucumber
  • avocado
  • 1 can of black beans rinsed
  • 3 Tb. finely chopped chives
  • 2 Tb. fresh lemon juice (real lemons! do it!)
  • Salt to taste
Directions
1. Cook quinoa according to directions (or in rice cooker BOOM!).
2. Chop everything then mix together.
3. DIE OF AMAZINGNESS.

Considerations
I originally got the recipe here, but added the avocado and beans to make it a complete meal.  I also doubled everything so I could have it for lunches this week. If storing, I would put the "watery" vegetables and fruit into separate bags or tupperware and add to the mix right before eating so it doesn't make everything else soggy (cucumber, mango, tomato). I would also recommend making this the day you buy all of the ingredients and trying to get them as local as possible for freshness- this is FULL of flavor! Also, I may have a new obsession with quinoa, but see why from the all knowing wikipedia:

In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high (18%). Nutritional evaluations of quinoa indicate that it is a source of complete protein.[14][15]Furthermore, it is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa also provides a significant source of calcium, and thus is useful for vegans and those who are lactose intolerant.[16][17] Quinoa is gluten-free and considered easy to digest.

Be: Healthy

So over the last 5 weeks or so I've been on a ROLL with my new healthy lifestyle and feel like I've finally gotten the hang of not just over dieting and burning myself out with intense exercise, but instead have found this balance of "Quit Eating Shit All The Time and Move Your Ass". Now we aren't burning out and committing to impossible exercise/eating/weight loss goals- I've become an adult!

My Super Awesome "Grown Ass Woman" Diet:

Goals:
-more lean protein, veggies, and fruits. Less carbs, processed foods, sugars, fatty meats
-eat super healthy during the weekdays, little splurges on the weekends
-quit drinking so much (TBD)
-wake your lazy self up earlier to make a proper breakfast full of protein to keep you full and energetic all morning plus time to make an awesome lunch

I pretty much eat variations of the same staples everyday now, my trips to the store are really easy now and I diversify it enough that it doesn't become too boring.

Steal what you will and let me know what works or any ideas. Especially for dinner as I am obviously broken in that department.

Keeping A Routine.

1 , 2

If being unemployed for 2.5 months has taught me anything, its been to keep a routine. After the initial few weeks of laziness, weight gain, semi depression, and frantic job applying- I've finally managed to find a sense of routine in a few important areas I hope to continue doing when I start working again (Monday! Yay!).

1. Make an amazing breakfast everyday. In fact, use all this new found time to cook and eat healthy.

  • Instead of eating crap and being lazy everyday, wake up and make an awesome breakfast of eggs, veggie sausage, and toast. I make breakfast sandwiches, omelets with leftover vegetables, amazing scrambled eggs, etc. I've gotten so good and fast at it, I know if I wake up just 15 minutes earlier a day I can eat an amazing healthy breakfast full of protein that keeps me full until lunch!
2. Get fresh air and exercise everyday.

  • After you eat your awesome breakfast, but before you shower (yes, you're unemployed. But no, that doesn't excuse you from showering) GO OUTSIDE. Even if its cold. Walk around the block or neighborhood, if you have a dog bring them too. I've also been adding strength training, a bit of yoga, stretching, and somedays cardio right afterwards (just workout videos in my room btw, you know I cant afford no gym membership). My goal was to get it all in under an hour so I could do it before work everyday once I go back. And sure enough, here I am a week into it and feel weird if I don't do this everyday. I don't need to go into the benefits of regular movement in our lives, you already know, but for me I already feel 10x more awesome.
3. Clean a little everyday.

  • Yeah, this one kind of sucks, but it's important. I usually do it after I exercise while I'm drinking my protein shake and muddling around the house. A little vacuuming, dishes, laundry, picking up...I guess I realized I'd rather do a little each day then all on the weekends once I go back to work. And it's true, once I get home from work if I don't sit down and just keep moving for 20+ minutes things look 10x better most of the time.
4. Find something productive, do it everyday.
  • Mine has been writing everyday. Either it was here or working on my book, but everyday I try and spend writing. Such an excellent habit to take on as a writer. However, if you want to work on your art, sewing, baking, whatever craft. Do it. At the end of the day you will feel like you accomplished something instead of just re-watching an entire season of Ally McBeal.
SERIOUSLY finding these bits of routine everyday has helped me not go insane. Plus, I am not spending money and at the end of the day when someone asks me what I did that day, I have some legitimate things to say. Not to mention I feel healthier, more balanced, happy, and secure. If you're still looking for work, put it into the routine for 2 hours a day or a few days a week and then be done with it. Otherwise you will obsess and then depress like I did, which didn't really help anything in the end anyway.

So whether you are part of the 8.3% of unemployed Americans like me, or just feel like your daily life is lagging a bit, do consider adding some of these to your routine. Protein for breakfast, exercise, fresh air, keeping things clean, and being productive never hurt anyone.

Now I am going to go take my own advice.

Have a lovely day!

xoxo

Why Am I Allowed To Bake Cakes?

Seriously, every time I try and make a proper cake it ends up falling over/melting/being weird in some way. Double layer cakes and I are now officially ENEMIES. However, THIS time I've pinpointed my failures and instead of writing how to make an awesome home made cake- this is going to be a "How To Not Fuck Your Cake Up". Also, you can laugh at my failures.

TIPS:

-Always check that you have ALL your needed ingredients before beginning. Physically look...otherwise you end up having to go to the store in the middle of baking because your room mates surprise! -ate the eggs you thought you had.

-I learned this last time, take your butter out before you begin baking if it requires room temperature butter. DONT melt it in the microwave because it makes your recipe all sticky and angry. I put mine outside in the sun for a cheatsies though.

-If parts of the cake are angry and falling, use tooth picks to hold them together. Do NOT just put them together and frost it anyway...as you will see why.

-WAIT UNTIL THE CAKES ARE COOLED COMPLETELY before frosting anything. Seriously.

I used Martha Stewert's Versatile Vanilla Cake recipe because it seemed relatively easy and her picture looked so pretty. Turns out its also SO FREAKING DELICIOUS. You're welcome.

Ingredients

1 cup (2 sticks) unsalted butter, room temperature (more if you want to butter your pans instead of spraying them like I did)
2.5 cups all purpose flour (or equivalent of cake flour)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1.5 cups sugar
2 large eggs
3 large egg yolks
2 teaspoons vanilla extract
1 cup low-fat buttermilk

Directions
1. Preheat oven to 350 degrees. In a medium bowl whisk the flour, baking powder, baking soda, and salt.

2. In a large bowl using an electric mixer beat the butter and sugar until light and fluffy. With the mixer on low beat in eggs and yolks one at a time. Beat in vanilla. Alternatively beat in flour mixture and buttermilk, beginning and ending with flour mixture. Mix well until combined.

3. Divide batter between pans, smooth tops. Bake until cakes pull away from the sides of the pans, 32-35 minutes. Let cool in pans 10 minutes then run a knife around edges of the pans and invert the cakes onto a wire rack. LET COOL COMPLETELY (this is key my friends, key)

4. Place one cake, bottom side up on a cake stand. Using a table knife, spread top with frosting. Top with remaining cake, frost the top and then sides.

I couldn't figure out how to make her delicious looking whipped frosting recipe (hold the metal bowl over the boiling water but dont immerse it? WHAT?) so I just used the butter frosting recipe on the back of my powdered sugar bag. However, due to how the cake turned out, as you will see, I am NOT recommending it.

Uh. Yeah. Melting droopy angry birthday cake for my parents 50th birthday party. SEE why I need toothpicks and to wait until its all cooled to frost it. Not to mention a better frosting recipe. Damn. BUT I will say, it tasted so good and the cake inside is 10x better then any box cake so it wasn't a complete failure. Plus if you are a beginner baker, cooking for family who will eat any kind of cake and only minorly tease you is the best audience.

Now go spread your new found wisdom on some poor defenseless cake.

xoxo

Eggs: The Best Recipe Of Your Life.

I am a huge advocate of straight up protein in the morning. It SERIOUSLY makes you wake up, keeps you full until lunch, and gets the "I hate mornings" mixtape running through my head to turn off. Most of the time I get up an entire 30min early just to make myself breakfast (and a lunch for later)! Eggs are my go to because they are fast, delicious, and easy. Now, its recently occurred to me that my mother is a fantastic cook. Especially in the last 5 years she took a few cooking classes, read a few books, watched too many Gordon Ramsay shows...and just has all these tricks and recipes up her sleeve she can whip out at any time. Including (drum roll please) THE MOST AMAZING SCRAMBLED EGGS OF YOUR LIFE. I'm not exaggerating. Prepare yourself.
As You will now learn how to make the perfect scrambled egg.

Its as easy as watching this. Seriously, its a 4 minute video I watched twice and got it by heart.

Now don't be afraid. You can do this.

Things You Need:
-Pot
-Spatula
-3 eggs
-butter
-creme fraiche
-salt and pepper

*optional: chives, basil, any other veggies you'd like on the side

Now Do It
1. As you hopefully saw in the video (seriously, 4 minutes is worth it for the most amazing eggs of your life) say goodbye to your frying pan and bust out a pot and spatula. Before your pot is even on the stove crack your eggs and add a bit of butter to it. THEN put it on the heat and stir it with the spatula

2. Now the fun part! After a bit, start to take it on and off the heat. Just hold the pot above the burner while stirring or move it to another burner. KEEP STIRRING. Never give up on stirring!

3. You will see them forming mmmmm now at the end add your bit of creme fraiche and stir that deliciousness in there too.

4. Fold in your chives or basil. Add salt and pepper now (not before!).

5. Enjoy the most amazing eggs of your entire life.

Now I havent done the full on breakfast like he does in the video, but I plan to get me some tomatoes, mushrooms, and a bit of sourdough for the weekends when I have more time too.

So thank you mom for making these on the weekends. And thank you Gordon Ramsey for inspiring the best scrambled eggs of your life.

Enjoy!

xoxo

Unemployment Whoopie Pies

I have been wanting to make Whoopie Pies for a few years as soon as I saw them on a blog and died of cuteness. However, I found the recipes to be more time consuming then I usually am able to allot for baking (and I get bored after too long) and filled with a few odd ingredients I never wanted to buy. SO when I found a $3 Lemon Whoopie Pie Kit at Home Goods where you only had to add oil, powdered sugar, an egg, and some milk I was IN. I already had all the other ingredients! Therefore it was in the category for an "Unemployment" baked good. They had a few other cheap kits for fun things to make I might stop by and get some more!

Stop by your local Home Goods to try and find yourself a $3 kit if you're unemployed like me, OR order one off Amazon. Or homemake your own! There is also a vegan recipe that looks lovely.

This is all you need!

Mix yoself up some whoopie.

YOU DO NOT NEED A SPECIAL PAN to make whoopie pies! Just put down some parchment or wax paper and little 1 TB scoops on each pan. After they were done I matched weird shaped ones with other weird ones so they could be friends match.

Voila! Deliciousness! I made these for my dads 50th birthday today! They are almost already gone!

"I love baking and talking to my bf on the phone at the same time! Unemployment didn't completely suck today!"

So go make some whoopie!

Unemployment Bread

Still unemployed but need to bring something to a dinner party? Would you really enjoy something for breakfast other than $1 store cereal? Then meet unemployment bread! This recipe is from my grandma and our family in Ireland. Its a traditional old Irish recipe my mother and I like to nerdily imagine them making on a skillet over a fire...and it is SO DELICIOUS and SO EASY you will love it!! Bonus: requires few ingredients, most you (or your parents) already have in your cupboards. Win.

Irish Soda Bread
2 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 cup to 1 1/3 cup buttermilk or plain yogurt (the only odd ingredient! And its cheap!)

Mix together everything and make a round ball, kneed a few times to get rid of stickiness. Flatten somewhat with a rolling pin and cut into four parts. Sprinkle flour on a frying pan and heat. Place the parts on for 10 minutes each side. (until they're a nice light brown). Remove and cool on wire rack. Good warm or cold!

The ingredients.

The flatten.

The cooking.

Now you're ready to go to your party where everyone thinks you are just little Miss Suzy Homemaker, when really you're just unemployed.

Don't have too many more days of this unemployment gig though, things are happening!

Unemployment Rice & Beans

Still unemployed? Hungry? Oh what do you know, me too. I found this easy black bean and rice recipe and my parents already had all of the ingredients for it in their cupboards- score! Luckily none are very expensive anyway even if you're missing something, its rather tasty and filling, and easy to make.

Ingredients

-1 cup uncooked brown or white rice
-1 tbsp olive oil
-1 small onion, chopped
-1/2 one color bell pepper, thinly sliced
-1/2 another color bell papper, thinly sliced
-3 cloves minced garlic
-2 16oz cants of black beans rinsed and drained
-2 tbsp white vinegar
-tabasco and cayenne to taste
-1 tsp dried oregano or fresh oregano
-salt and pepper to taste
-lime wedges

1) Cook yoself up some rice in your rice cooker, microwave, whatever you got. Rice is really cheap and a good thing to always have on hand when you're unemployed. I always go for brown since its healthier and tasted great with this recipe. While thats cooking...

2) Heat olive oil in skillet on medium high. Saute onions and bell peppers for 3-4 minutes until they begin to soften. Then add the garlic and saute a bit more (dont let it burn!). Add the black beans, vinegar, and tabasco or cayenne. Bring to a boil, reduce heat, cover, and simmer for 5 minutes.

3) Stir in rice and oregano. Add salt and pepper to taste.

I would HIGHLY recommend adding some vegetable broth to the beans while they are cooking since it came out rather dry. Also the more tabasco or cayenne the better and a lime squeezed in at the end makes a BIG difference!

"I made my own dinner with free ingredients I found in the cupboards!"

Happy Cooking.

The Weekend Look

Oh hey there, is that you in public wearing leggings, leopard print flats, and a pink sweater with a DEER and HEART on it? Yep. Either its the Europe coming out, because Mr. Boyfriend is currently so far away, or that I'm sick of my wardrobe that I haven't been able to update in almost a year- but my downtime wardrobe has gotten "awesome" as of recently.

And on that note, enjoy the long weekend! No matter what weird crap you're wearing.

Unemployment Cookies

Oh hey! Are you unemployed too? Or only working a few days a week due to lack of sub jobs? Living at home and don't qualify for unemployment? Well then you should whip up a batch of "Unemployment Cookies" on your next day where you want to die of boredom!

The great thing about this recipe is that everything should pretty much already be in your parents cupboards so you dont have to spend any more money you dont have on ingredients. However, I would HIGHLY recommend splurging a few dollars on some Swans Down Cake Flour if you don't already swear by it. It makes the cookies super light and fluffy and sweeter! You can use it to replace anything that calls for All Purpose, they have the exchange measurement on the box.

I just got this recipe from All Recipes but substituted the Swans Down cake flour for all purpose.

  • 2 3/4 cups all-purpose flour OR 2 cups Swans Down Cake Flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

The great thing about Unemployment Cookies is that you can do whatever you want with them since you may or may not be sharing them with anyone who matters. I attempted to do heart shapes, which didn't really turn out, undercooked a pan worth, and burnt an entire other pan worth too! Plus my decorating attempts before getting bored and quitting after 4 were pretty horrible:

But the good news is: NO ONE CARES. You aren't making them for anyone in particular, they are solely Unemployment Cookies to be shared as you desire.

Tonight I am taking some of the non decorated and non burnt ones to Annies for girls taco and movie night though, girl friends tend to not care about weird looking cookies...as long as they're edible.

More Unemployment Desserts to come!

Free Love.

I am all about hand made and sweet gifts for Valentines day, they feel so much full of love because it takes time and effort to put them together. Don't think men don't notice, I think most men feel just as loved when you make them dinner as they do when you give them an expensive present! (such easy creatures, really).

This year I sent the far and away boyfriend his favorite home made cookies, a USB full of music with a hand made booklet attached of everything included and my favorite songs so we could discuss later, and a really special journal of sorts I bought blank and filled over the last month with writings, drawings, thoughts, sweet things about him. I even copied some of my writings on here in there from when I first fell for him so he could see into my head a bit. Unfortunately, despite me sending it over a week ago it hasn't arrived yet, so I had to send some virtual ones for today.

Check these super sweet free ones you can print and do something amazing with for whoever you love in your life today! I used a lot of things like this to stick inside his little notebook, their design is rather lovely.

Ill be printing this to put on my reception desk today! Alongside the "horrible" looking sugar cookies and red velvet cupcakes some "terrible" woman brought in today. Full pdf link here!

Look at these precious cup wrappers! I'm about to go buy one of those self decorating thermal cups and stick this inside- precious. Get them free to print here.

The Mod Cloth blog put a bunch of these beauties up from famous literature. This is my favorite, but see the rest and print for a home made card here.

Great Finds: Skin & Nails

I was preparing a little email to all my girl friends getting married (all FIVE of them) to let them know of the amazing skin and nail care finds I have finally found in our area. When you find a great girl and price, its just selfish not to share.

Skin

Nicole Peters is the owner and main esthetician, you will LOVE her because she's cute and young like us and her business is beautiful! She does all kinds of skin care needs (waxing, facials, etc), but I now see her once a month for my beloved brazilian. For regular appointments its only $35 for a brazilian (A STEAL!), and even just once in awhile will only go for $45. Her new place is in kind of a random shopping center in Carlsbad, but once you're inside its really quite lovely. I am SO excited to have found this little gem and support a fellow young woman with her own business.

*For all my brides: start your Brazilians now so by your wedding you're so silky soft! Every time it grows in thinner and I promise, hurts less and less. Worth EVERY penny.

Nails

Finding a good and quick manicurist is another feat. TINA at Nail Toepia in La Costa is the owner of this place I have been getting fantastic pedicures at since I was in high school, and now she does my gels for me. Their new "quick gel" goes over your natural nail without damaging it and lasts for almost a month. Its fast, cheaper than manicures and looks natural. And by cheap, I mean around $20 for a beautiful gel manicure that lasts weeks! Don't be put off by it not being too fancy shmancy, Tina knows what she's doing and is almost like a community figure in our area because we all love her work so much!

*For all my brides: They also do fantastic pedicures with spa chairs and add ons like massages while you're getting your feet done! Although I would not recommend their waxing services after a bad experience, go see Nicole for all of that.

The Look: Work

Now that we've addressed the shoe issue, I have begun collecting all of the dresses I could wear to work as well. Now, I like to get multipurpose dresses- meaning, the dresses I buy need to have at least TWO functions...if not multiple ones. Most of these I could wear to dinner...weddings...work...the club...or even paired with flats  for easy out and about for errands. Now these aren't even expensive suckas! Between $30-$60 each!

For anything but work, I'd pair these with a more fun shoe...not so low and conservative like the work shoes. Now all we need are some kick ass accessories and we are SET. Stay tuned!

xoxo
